DEPARTMENT: Food & Beverage Kitchen

REPORTS TO: Executive Pastry Chef, Executive Sous Chef

LEADS: Line Cooks

Chef Tournant


The Chef Tournant is a "hands-on" supervisor and will serve as a link between the Executive Chef or Sous Chefs and other kitchen teammates. He or she
will primarily be responsible for assisting in the training and managing of Line Cooks. Chef Tournants could be rotated into different areas or required to cook with or without advance notice to help with business demands and career development . These assignments may be for the short- or long-term.

Essential Functions

Major areas of responsibility/management include, but are not limited to:

* Aid Executive Sous Chef and Pastry Sous Chef in on-going training, managing, and assisting Line Cooks.

* Assist Executive Sous Chef and Pasty Chef in month-end inventory.

* Assist Kitchen Management team by helping to keep kitchen products properly organized, labeled, dated, and rotated.

* Ensure all communication, standards, policies, and expectations are communicated to his/her team and then executed flawlessly.

* Ensure all supplies and inventories are readily available, expectations are communicated, and recipes are current.

* Assist Cooks in various areas of the Kitchen as required.

* Use a broad knowledge of cooking techniques and food styles to ensure consistency.

* Have full knowledge of all menu items, daily features, and promotions.

* Ensure that teammates meet and uphold sanitation and safety standards.

* Ensure the cleanliness and maintenance of all work areas, utensils, and equipment.

* Present ideas to limit waste and improve cross utilization of products.

* Actively share ideas, opinions, and suggestions in daily shift briefings.


* High School diploma or equivalent

* Culinary degree (certificate or 2 years preferred)

* Serve Safe Certification preferred

* Minimum 1-year supervisory experience in fine dining establishment

* Must have advanced knife skills

* Advanced knowledge of hotel standards and restaurant cooking methods

* Excellent communication and organizational skills

* Aptitude to multi-task

* Must be able to work cooperatively and efficiently in a team

Physical Demands and Work Environment

* Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.

* Push, pull or lift up to 50 pounds.

* Continuous repetitive motions.

* Work in extremely hot, cold, humid, and noisy environment.
